Tomato Jack Scramble

There's something about Monterrey Jack cheese and scrambled eggs that tempts me. I love it.



1-2 Tbsp Olive Oil
1/3 Cup chopped Tomatoes
1/4 Cup chopped Mushrooms
1/2 Green Onion
2 Large Eggs
1/4 Cup Monterrey Jack cheese
Salt and Pepper to taste

Combine olive oil and vegetables in frying pan. Cook until soft. Add eggs and scramble with veggies. Do not overcook your eggs (They should be soft and glossy but not transparent). Add cheese, salt and pepper. Serve immediately.

Alphabet Soup

This is so quick and easy and fun to play with.

1 28oz can diced tomatoes
1/2 cup black beans
1/2 cup pinto beans
1 chopped green onion
1/2 cup frozen corn
1 cup alphabet noodles
1tsp each: cumin, garlic powder, onion powder, salt and pepper
5 cups water

Mix everything in a medium saucepan except the noodles. Bring to a boil. Lower heat and simmer for 10 minutes. Add noodles and cook another 7-10 minutes until noodles are al dente. Serve by itself or garnish with sour cream and cheese.

I buy my alphabet noodles in the Mexican foods section of the grocery store- they're way cheap.

Quiche with Bacon and Spinach

It's elegant enough to serve at a party and simple enough to have the kids help. Everyone in my family enjoys this dish enough that two is almost not enough.

1/2 Bunch of Spinach stemmed and broken up
1/3 Lb Bacon crumbled
2/3 Cup Cheese (I use Colby Jack or Mozzarella)
6 eggs
1 Cup Milk or Cream
a dash of salt and pepper

Mix spinach, milk, eggs, salt and pepper in a blender or with an egg beater until pureed. Place bacon and cheese in Baked pie crust. Pour the egg mixture over the top of the bacon and cheese. Bake at 400 degrees for 40 minutes or until a knife inserted in the center comes out clean.


If you are doing a crustless quiche, bake in pie pan at 350 degrees for 40-45 minutes.

Baked Asparagus

Oh, so easy and Oh, so good.

One bunch of asparagus tips (hold each spear by the base and the middle and snap- mother nature knows where to break off).

1-2 Tbsp Olive oil
1 tsp Salt
1tsp Pepper
1/3 Cup Parmesan cheese

Place everything in a large ziploc baggie and shake until evenly coated. Preheat oven to 400 degrees. Spread spears out on a cookie sheet. Bake for approximately 20 minutes.

Baked Zucchini

There are many ways to eat zucchini: steamed, fried, in bread, or cake. This recipe is as simple as steaming, but has a lot more flavor.

Cut the desired number of zucchini's in half longways. Spoon out the seeds. Fill with spaghetti sauce (preferably homemade). and top with Colby jack cheese. You can also add grilled peppers and/or onions.

Bake covered in a 9x13" pan at 350 degrees for 20-30 minutes (remove foil for last 10 minutes of baking time), or until tender.

Greek Salad

I tried this in Phnom Penh, Cambodia of all places. I loved it so I made my own version. I like more cucumber and less olive, my husband likes just the opposite.

Salad:

1 diced cucumber
1 diced tomato
1 chopped green onion
1/4 cup chopped black olives
3-4oz crumbled feta
Mix all of the above together.

Dressing:
2 Tbsp olive oil
1 Tbsp vinegar
1 Tbsp lemon juice
A dash of pepper

Pour vinaigrette over salad, toss and enjoy.
