Linguine Primavera


One of my favorite dishes. It is delicious with whole wheat pasta. You feel good after eating a dish so loaded with veggies, and it is filling. But, that might be because you can't stop eating it.

Grilled Pizza

You can enjoy homemade pizza without heating up the house this summer.


Start with my Pizza Dough that is an adapted version of Betty Crocker's.

Greek Salad

I tried this in Phnom Penh, Cambodia of all places. I loved it so I made my own version. I like more cucumber and less olive, my husband likes just the opposite.

Salad:

1 diced cucumber
1 diced tomato
1 chopped green onion
1/4 cup chopped black olives
3-4oz crumbled feta
Mix all of the above together.

Dressing:
2 Tbsp olive oil
1 Tbsp vinegar
1 Tbsp lemon juice
A dash of pepper

Pour vinaigrette over salad, toss and enjoy.
