Linguine Primavera

One of my favorite dishes. It is delicious with whole wheat pasta. You feel good after eating a dish so loaded with veggies, and it is filling. But, that might be because you can't stop eating it.

1 Pint Cream
1 Quart Tomatoes, juices drained and pureed
1/2 Cup Shredded Parmesan or Romano cheese

Simmer tomatoes over medium heat for 15-20 minutes. Add cream and Parmesan. Simmer until thickened.

Pasta and Veggies
1 Bunch Broccoli washed and cut up
1 Can Black Olives chopped
1 Yellow Squash cut into bite sized pieces
1 Caulifower cut up
1 Yellow Onion diced

Prepare all the veggies, heat in a large skillet until tender. Cook the linguine following package instructions until the noodles are al dente. Combine pasta, veggies, and sauce. Salt to taste. Serve hot.
