Tomato Jack Scramble

There's something about Monterrey Jack cheese and scrambled eggs that tempts me. I love it.



1-2 Tbsp Olive Oil
1/3 Cup chopped Tomatoes
1/4 Cup chopped Mushrooms
1/2 Green Onion
2 Large Eggs
1/4 Cup Monterrey Jack cheese
Salt and Pepper to taste

Combine olive oil and vegetables in frying pan. Cook until soft. Add eggs and scramble with veggies. Do not overcook your eggs (They should be soft and glossy but not transparent). Add cheese, salt and pepper. Serve immediately.
