Apple Muffins

You get apples in your basket from Bountiful Baskets almost every week, and this is a yummy recipe you can use up some of those extra apples with. They freeze well too.

2 Cups shredded apples (approximately 3 apples)
3/4 Cup Milk
1 Egg
1/4 Cup sugar
1/4 Cup Brown sugar
2 Tbsp Flaxseed
1/2 tsp ground cinnamon

Mix above ingredients in large bowl. Add:

2 tsp Baking Powder
1/2 tsp Salt
2 Cups flour
Mix until combined. Add milk one tablespoon at a time until moistened. Spray muffin tin or use paper cups, fill cups 3/4 full. Sprinkle with streusel topping. Makes 12 muffins.
Bake in preheated oven at 400 degrees for 20-25 minutes.


Streusel Topping from Betty Crocker

1/4 Cup Flour
1/4 Cup Brown Sugar
1/4 tsp Cinnamon
2 Tbsp Softened Butter

Mix dry ingredients. Cut in butter with pastry blender until crumbly.
